Guest guest Posted January 5, 2003 Report Share Posted January 5, 2003 Here's a recipe from a cook book i've had for a while. I'm thinking of trying it for tea tonight because it looks so yummy! Pasta with Aubergines (from the Luscious Low Fat Cookbook by Alison Rose & Tony guy) Serves 4 – 6 2 medium aubergines salt 2 tsp olive oil 3 large garlic cloves, finely chopped 3 onions, chopped 3 x 400g cans plum tomatoes, undrained 1 tbsp dried basil 450g penne pasta or macaroni 2 tbsp low fat ricotta cheese 1. Cut the aubergines lengthways or crossways into 2.5cm thick slices. Lightly salt each slice, stack the slices, and then set them aside for about 20 minutes. 2. Preheat the oven to 240 degrees centigrade/gas mark 9. 3. Heat the oil in a large pan and sauté the garlic and onions until the onions azre golden. Stir often enough to prevent sticking. Chop the tomatoes and add to the saucepan. Add the basil and continue to cook, stirring occasionally, until the sauce begins to thicken. 4. While the tomato sauce cooks, rinse and dry the aubergine slices. Prepare a large baking sheet with cooking spray or a light coating of vegetable oil. Place a single layer of aubergine slices on the baking sheet and bake, uncovered, for 15 minutes. With a metal spatula carefully flip the slices over and bake for another 15 minutes. 5. About 5 minutes before the aubergine finishes baking, bring a large covered pot of water to the boil. 6. When the aubergine slices are tender and browned, remove them from the oven, allow to cool slightly and then cut into 1.2 x 7.5cm strips. Stir the aubergine into the tomato sauce and cook for about 10 more minutes. 7. When the water boils, stir into the pasta and cook according to the packets instructions.
