On baked potatoes, no margarine--try lemon juice only. Most soy-based and rice-based cheese and deli-type "meats" are very low in fat. Stick with low fat tofu. if you use soy milk, be sure it is the low fat variety. Elimninate any unnecessary condiment--try a sandwich dry, without the vegannaise. You'll grow accustomed to it, so much so that when you (once in a while) splurge on the reale thing, it actually tastes good. The other day at the heath food store, I came across a book that is exactly what I was looking for. It is called "The Lighthearted Vegetarian Gourmet Cookbook" by Steve Victor. It is pretty old, 1988, but I did a search under the name of the cookbook and it looks like you can still get it. It is really different than other cookbooks. He explains everything in great detail and tells you why and how on everything. He tells you how many fats grams on everything and even helps you figure it if you combine different foods at a meal. His recipes are very ordinary! He doesn't do Tofu or anything usually thought of a "Vegetarian" or :Vegan". He just takes normal recipes and makes them work. It is interesting and looks great. I have to admit that I have not tried anything in it yet. But, I think it is going to be a fantastic bood and guide for what your are looking for. Anyway, you might want to look into it. If you cannot get a copy of it, let me know, and I can run you off copies of it. It is only about 100 pages long. Guest guest Posted April 12, 2003 Report Share Posted April 12, 2003 Instead of baked potatoes, I have found that if I cut them up and sprinkle some Season-All or other seasoning on them, and microwave or roast them, they are delicious without added fat.
