In our household, we have ways of getting around these problems - and I like to cook. So I have two questions, each relating to the "problems' above: Question #1: How many of you would like me to post recipes intended for *two* which other couples like us could use or which could be altered for solo vegetarians (either those living alone or those who are the only veggies in the household)? Question #2: How many of you would like me to post what I will call 'economy' recipes (for want of a better term)? Could you please just respond to this email - it's not a poll *lol* (If this is not of particular interest to you, could you just please email anyway and *say* so??? - on or off list is okay!) Luckily I am pretty good about eating the same leftovers for days at a time but sometimes they do in fact get thrown out - either I just can't eat another bite or i end up making something in between and I really hate freezing things because I have such a small freezer and I keep other things frozen that are not really ready made like frozen veggies that I use in my salads like soybeans and corn and nuts. I am just very interested to see what other people who live with small numbers cook like. I do end up buying more ready made things than I would like (Whole foods has the best salad bar with all sorts of ready-made salads) simply because I would like something but don't want a whole mess of it in my fridge for days. Plus I buy some ready made things for portion control - can't get more of it if there isn't any in the fridge. I'm relatively frugal but sometimes it is wiser to spend more. Recipes for two can be expanded, yet are a good way to try something new and not have "boatloads" of it if it doesn't work for your family.
