refried bean help

Black beans are good to use also.

Absolutely, beans are pretty interchangeable. When I make them, I usually make a huge batch with 2-3 differents kinds. Black beans look weird, but taste great.

One recipe I have calls for black beans (turtle beans) rather than pinto

beans ;=)

hi pat

my recipe for curry; i use vegetables that are in season, in the kitchen or that take my fancy, the one i made last night was;

saute 2 chopped onions until see through, add curry powder and jeera and briefly stir...add water, chick peas(2 tins or dried and soaked equivalent) a tin of gungo or pidgeon peas,chopped tomatoes, sweetcorn off the cobb,dash of pepper sauce,2 chopped up leeks,add red lentils a handful ....bring to the boil then simmer for a hour.....add broccoli in the last 20 minutes and brown rice..........

serve with tomato and cucumber salad, with virgin olive oil sprinkle.......

if you dont add too much brown rice, its filling but not too many calories......and wonderful cold the next day........another version also has potatoes in it.....they need to be cut in eigths and boil down wonderfully.......

That sounds really good, Catherine ;=) Thanks! We all have our

favourites, right? One could also mix ones own spices in lieu of a

commercial curry powder - and use veg stock instead of water if looking

for maximum nutrition. Red lentils are really good to use here because

not only do they have great flavour but they cook up very quickly - as

well as thickening the sauce, of course. (So if one were to make this

*without* the lentils, you'd have to look to some way of thickening -

probably by adding those potatoes.)
