Black beans look weird, but taste great. One could also mix ones own spices in lieu of a commercial curry powder - and use veg stock instead of water if looking for maximum nutrition. Red lentils are really good to use here because not only do they have great flavour but they cook up very quickly - as well as thickening the sauce, of course. (So if one were to make this *without* the lentils, you'd have to look to some way of thickening - probably by adding those potatoes.)
