press tofu

This is probably going to be a really dumb question, but I just

bought some med/firm tofu, and I had heard that it is best to " press "

it. I guess they mean to get rid of some of the water????? How do I

do that? What will be the diffence in regards to the texture of the

tofu? I've been making this recipe called Tom Tofu and I heard that

by doing this the texture might be better????HELP!

Okay, the easiest way to press tofu (to get rid of some water - so, in

some recipes, it will brown more nicely or take in more of the flavours

of the sauce it is in or have a more 'meaty' texture (whatever fits

*lol*) - is to put it in a bowl, place a plate on top of it and a large

can of something like tomatoes or juice on top of that as a weight. It

will exude the extra liquid, which you will pour off. Okay?

Also, if you are going to use it for grilling or something (anything that doesn't involve the blender!) try freezing it first, then thaw and press like Pat said.... OMG it's super yummy, i really like the texture that way, it's chewy and tasty :o)
