My husband ferried food in to me of course (not about to let me starve ;=)) but I found out that my favourite food was - wait for it - cream of celery soup. This is something I sometimes make - my version freezes nicely. But of course I didn't have any made and so my dh, not having my recipe, brought in the canned variety and I soaked it up as if it was ambrosia. That an avocadoes ;=)Of course, I ate other things too, but those two were soooooo necessary, I felt, at the time. You just simmer a bunch of chopped celery with a little onion and garlic and your favourite herbs in some veggie broth until they are all mushy, then zap them in the blender and add tofu to the blender until it looks/tastes right. More veggie broth might be needed. Dead easy. My dh thinks it's great and I'm not about to disillusion him *lol* (Oh, and you can leave a little un-zapped veggie mix out of the blender and stir it all in together later, for a more textured soup.) This works with most veggies, including blends of veggies and fruit. I love guacamole - and mashed potatoes with dark mushroom gravy . . . Thanks. As I say, it's never the same twice because the ingrediants, amounts and cooking time always vary depending on what I have in the fridge.
