Wot's for Dinner???? ;=)

Big question. It's Monday and - don't know about you - but I'm feeling lazy. So

what's for dinner??? Something quick and easy, or are you all super-

organized and have something you made over the weekend and have

waiting in the fridge or freezer? Or lucky enough to be going out to eat or at

least to pick it up???

 

Me? Have some asparagus I just picked up - then discovered I was out of

most of what I thought I had in :=( Sooooo, I shall do that Hong Kong style

asparagus stir-fry over rice. That should do the trick! (Recipe is in the Files

under Main Dishes, I'm pretty sure.) I shall be cutting down on the use of oil

as

usual - ho hum, but with asparagus it isn't much needed.

 

Okay, that's me. What about you?

I don't know about what i'm gonna eat, but I made crock pot beans w/ ham for the rest of

the family to use up this giant ham my dh bought at costco. I really like the GimmeLean

sausage style tvp so I might saute some of that up with some veggies and beans and

tomato sauce and have a nice chilli :)

 

Or I might eat frozen waffles lol. I'm tired and don't feel like cooking anything.

we had spinach/tofu egg rolls and veggie hash that has left over corn on the

cob, string beans, carrots and red potato and onion in it....was yummy!

Ain't that always the way - get tired out cooking for other people *lol* Give

your husband a cookbook for his birthday - or before. I'm sure he's a

wonderful person and deserves an extra little gift now and then ;=)

 

Waffles sound nice ;=) Not slimming, but nice.

Of course :) I had actually made up this awesome veggie chilli recipe and of course i can't remember where i stored it... I'll share it if i find it :)

hiya Pat....

 

I just sauté in a skillet, red potato, red onion, string,and wax beans,

baby carrots, and corn cut off the cob in a bit of vegan margarine and a

dash of dill weed, when they are browned a bit, I turn down the heat and put

a lid on the skillet and them steam until they are done....no big deal at

all. I think Earth Balance Vegan Margarine has the best flavor and the dash

of dill is all the spice needed. Of course, you could add pepper and salt

if you like. I personally avoid as much salt as possible and I figure if my

husband wants pepper, he can add that to his portion.

Well, I threw some leftovers together for dinner. I made a low-fat

white sauce with some skim milk, whole wheat flour, and curry powder,

and threw it together with some left over brown rice and a bunch of

leftover veggies (broccoli, onions, garlic, and mushrooms). I then

popped the whole thing in the oven for about 30 mins and it was

pretty darned good, if I do say so myself!

Yes, that *would* be good. Thanks for the tip ;=) Of course, it would work

nicely with soymilk too (for the vegans or lactose-intolerant members) or some

faux-cheese flavouring in the sauce instead of curry powder, although I think

that *bite* of spice would be a great plus. Really picks up leftovers.

yes, it is definately the dash of dill that does the trick! Its a bummer

you can't get Earth Balance where you are, I really feel for you!

 

As of Sunday, I have lost 70 lbs eating the way I do and I have gone from

having a handicap parking pass to walking 5 miles a day! No more knee

problems, no more migranes, no more heart palpatations, nuttin! It sure is

nice to live a healthy lifestyle instead of what I was doing before.

 

Organic veggies are wonderful huh? I only buy organic now, in everything I

get. I think I just feel " cleaner " eating organic!

NO MORE MIGRAINES? LOST 70 POUNDS? Waaahhhhh! I am so envious! Seriously, I don't have a lot of weight to lose (I would *like* to lose 20 pounds, but would be happy with 10-15). My biggest challenge is getting in the exercise. Although, the dog and I got up at 6 this morning and took a 30 minute walk (don't know mileage; can't find my pedometer). And, if I can get my schedule adjusted so I'm seeing private clients rather than going to the salon, I'll be able to get in more yoga and playing with the kids, as well.

 

I read a nice piece yesterday (although it was an advertorial) about a woman in Orange, CA, losing 90 pounds drinking a lot of juices from Jamba Juice. She had one every morning. Not a bad deal, if you're close to a store and can swing the $4-5/day for them!

 

My biggest challenge at the moment? Yep, the dog. The new holistic vet wants me to switch him to raw meaty (chicken) bones and, since he has some missing teeth, they need to be ground. I won't go into more detail here, definitely not the place, but I would appreciate anyone who is so inclined sending good thoughts my way.
