We generally have a lot of veggies in the house...it used to be simply because we had a lot of pets that needed fresh veggies (still do), but now we have less, and we end up eating a lot of the veggies ourselves, lol. I LOVE soups! That is basically what I will eat a lot of when I need something to snack on. I just follow my dietary guidelines (I'm type 2 diabetic), and see what I can have that is " free " , and make a decent soup from that. Hubby loves simple foods, like pasta, potatoes, etc. He also loves lasanga, which is pretty good if I say so myself He loves it if I make a veggie casserole or soup or anything to that effect. I am also trying to do some freezer cooking. We only have a small freezer (top of the fridge), but I figure if I can get a few extra things that are dried, then I can have a bit more stocked up. Hubby does a lot of the cooking when we eat very late, that's usually when I am not feeling good. When I do have things in the freezer, it is usually pretty healthy. Gary refuses to go vegetarian, simply because he was raised with veggies as a side dish only. But, at least he loves them!
