Guest guest Posted July 6, 2004 Report Share Posted July 6, 2004 I am an ovo-lacto leaning towards vegan. My wife and I live in Virginia. We are visiting California. My daughter took us to a Salvadorian restaurant. We had papusas for the first time. They were delicious. I believe they were totally vegan except for the cheese. Does anyone have experience with these? I am thinking firm tofu might replace the cheese. In any event I recommend these concoctions made with masa flour, beans, cheese, cabbage marinated in vinegar, and topped with mild salsa. My daughter also introduced me to fried yucca dipped in a garlic sauce. This wasn't all that great. I guess yucca is an acquired taste. The recipe calls for mild melting cheese such as ranchero or monterey jack. So what do people think about substituting tofu for that? Guest guest Posted July 7, 2004 Report Share Posted July 7, 2004 I had papusas once - years ago now - and they were delish ;=) I think substituting tofu wouldn't work too well - for one thing it isn't 'cheesy' and it also doesn't melt :=( There are recipes for non-dairy cheez to be found at the following site (which was one of the links I recently posted - it's under Recipe Links): http://www.aboverubies.org/healt.html You need to click into Recipes for Health (or whatever it's called) partway down the list on the left-hand side of the window. There is nothing that says it approximates Monterey Jack, but you might find something else that would work pretty well. Also, there are nice meltable tofu 'cheezes' available commercially, I understand. I am trying to think of the one that was especially recommended on another list some months ago - perhaps someone here will remember? - it had the word 'Heart' or 'Hart' in the brandname. As for posting recipes found on someone else's web page, as long as it isn't just a massive copying of recipes from one to the other would be okay by me in moderation *BUT* it must be approved *first* by the copyright owner - as usual ;=) Just ask - one is rarely refused or ignored.
