This is for a crustless cheese pie--I guess it's a quiche without the crust. 4 eggs 1 and 1/2 cup part skim milk ricotta Mix these together, add some salt and pepper. You could also add some herbs and about 1/4 cup grated Parmesan cheese. Now for the variations. You can add one or more of these to the egg/cheese mixture: 2 cups steamed spinach or 1 pkg frozen spinach (which has been thawed and well drained) or other green vegetables such as chard, kale, or collards. 2 cups of mushrooms 1 cup cooked brown rice or barley 2 cups chopped, cooked broccoli or 1 pkg chopped, frozen broccoli (thawed and well drained). 1/2 cup roasted red pepper 1 cup left-over whole wheat pasta 1 cup peas (cooked) 3 medium ripe tomatoes, thinly sliced The tomatoes are not mixed in with the other ingredients. If you use them, you would place them on top of the egg/ cheese mixture when you place it in the pie pan. You should pour the mixture in a 9" pie pan. I use a larger one, depending on how many "extra" ingredients I've added to the egg/cheese mixture. Then it goes into the oven which has been preheated to 350-375 degrees. Bake until it's set in the middle, about 30-35 minutes. I've made this with spinach and barley mixed in, and I've made it with broccoli inside and tomatoes on top. Both times it turned out well. It would look elegant and be low in fat and, without the crust, calories. I love the idea of spinach with tomatoes on top. Or the broccoli. Or . . . ;=) Thanks so much! The recipe I wrote out is based on two different recipes from two different magazines. If you make it with just spinach and do not add the Parmesan cheese, one fourth of a pie would have less than 200 calories.
