With all I've got going on, I'll probably fix us something quick and easy. One I like uses a good veg stock plus a tsp of miso for each person plus a pinch of cayenne and squares of tofu - to which one adds either julienned green beans, diagonally cut snow peas, or a few leaves of spinach - to be garnished with finely chopped green onions/scallions or coriander/cilantro as appropriate or liked;=) Simple and tasty. I made a nice big pot of veggie chili last night with black beans, kidney beans, barley, onions, and collard greens. It got real thick on me and ended up being more like a bean stew, but it was close enough and YUM!!! Made some cornbread muffins to go with it. Any soup made with tomatoes is a winner in our household. You can make a wonderful one quite quickly by adding bits of this and that (y'know, a little celery, a little onion, various spices incl. hot pepper) to a blender with, say, canned tomatoes (this was to be quick, remember ;=)) - add tofu for creaminess if you like it that way - etc. and of course, as you say, dried dill or herb of your choice (I tend towards basil or cilantro/coriander - in a bit of a rut there!). Love vegetable soup with big chunks and loads of flavor Love to add pasta too, actually I find that if I use spaghetti or spaghettini, the pasta does not soak up all of the liquid I love adding fresh salsa ingredients to soups - dried chilis, chopped fresh tomatoes, chopped onions, green pepper, and so forth. Of course I love home made salsa, and don't even mind the raw onions (I really don't like them unless they are chopped super fine, lol). Guest guest Posted August 11, 2004 Report Share Posted August 11, 2004 I know that this is a little late but I have a recipe that I sometimes make as potato soup and sometimes as broccoli soup and it's easy so here goes. Stef POTATO or BROCCOLI SOUP 6 cups veggie stock of choice 1 cup cubed potatoes OR 4 cups fresh broccoli 1 diced onion 1/4 cup non-fat sour cream 1 cup skim milk optional: 2 TBSP flour disolved in 4 TBSP water on 2 garlic cloves Throw the veggies in the stock and boil till the veggies are soft. Whizz up in blender or I use one of those hand blender things. Stir in milk, sour cream and flour and heat until hot. Season with salt and pepper and sometimes I like the kick of a little cayenne.
