Danish Cucumber Salad

 

2 small cucumbers sliced thin

1 cup water

1 cup sugar

1 cup white vinegar

1/4 teaspoon white pepper

1/4 teaspoon salt

 

Slice cucumbers thin. Mix water, sugar, vinegar, white pepper and

salt until sugar is dissolved. Add cucumbers. Refrigerate 4 to 6

hours. Serves 6 to 8.

 

 

HUNGARIAN CUCUMBER SALAD

 

2 tsp. salt

3 Tbls. apple cider vinegar OR white vinegar

1 1/2 tsp. granulated sugar

1/4 tsp. paprika

1/4 tsp. white pepper

1/2 clove garlic - minced

1 white onion- chopped

1 cup sour cream(you could use vegan sour cream, low fat or fat free)

paprika for garnish

 

In a bowl, sprinkle cucumber slices with salt, stir to coat, and

chill for 1 hour.

Mix vinegar, sugar, paprika, white pepper, and garlic; set aside.

Squeeze liquid from cucumbers, return to bowl, and discard liquid.

Add vinegar mixture, onions, and sour cream to bowl; stir to coat.

Sprinkle additional paprika over top.

Chill for 1-2 hours

My husband said it's the best raita he's ever had. Better than what he's served in the Indian restaurants he goes to for lunch (in Manhattan). He also said it's the 1st time he's seen tomatoes. But he LOVED it. The kids weren't crazy about it. I liked it but eh, the cumin didn't do it for me. (sorry, Jim)

 

I'm planning on making gazpacho soon. The cukes are happily waiting in the crisper. ;)
