I thought this was somewhat original, but NOPE!! My confusion/questions are about tomatoes or no? Bell peppers or no? Etc. There are sooooo many variations out there. Guest guest Posted August 21, 2004 Report Share Posted August 21, 2004 hi beth, traditionally succotash is made with only lima beans and corn, but ive seen it done with green beans, okra or any other vegetable you want to use. i would stick to the heartier veggies that will hold up thier shape and go well with the corn and beans. let me know how you do. if you need an exact recipelet me know. oh, by the way, if you use broth instead of water to cook the veggies it will give them more flavor. you could also bake them in the oven in a casserole dish with bread crumbs on top if you wanted to serve it as a main dish. shari Quote Link to comment Share on other sites More sharing options...

I saw fresh okra at a farmstand & wondered if it would be an ok addition. Sure, send along a recipe! I'll be sure to post what I end up doing, lol. Thanks!
