I am making my shopping list right now and just am ready to give up trying to find HEALTHY meals my kids will like. The 19mo isn't too particular - but my 5yo is so very, very picky. If it looks weird or anything it is a huge battle to get her to try it. I don't give her a choice - she HAS to take one bite so I am looking for meals that will be a winner with her in bite one. ( She does have some good tastes though - loves most fruits and several veggies, whole grain bread and crackers, and even likes eating wheat germ right out of the container!) It sounds like a may be a pushover mom but anyone who's ever had young kids that have ever been picky - you know you'll give anything to have a nice, peaceful mealtime. So does anyone have any meal ideas for me that are sure to be kid pleasing (not spicy, no tomato sauce - she's weird like that, won't be too strange looking lol, etc) I try to base our meals on lots of antioxident rich whole grains, wheat, fruits and veggies and of course work some protein in there too Thanks! Quesidella (not srue how to spell it, but you know, the flour totilla folded over with veggies and cheese in it)? Wagon wheel pasta with just a bit of oil and sautee'd veggies? Guest guest Posted September 8, 2004 Report Share Posted September 8, 2004 You could try this one: Macaroni and Cheese with this sauce: Cheesy Sauce The sauce recipe is from the " How it All Vegan " book with a few small changes. 1/2 cup nutritional yeast flakes 3 tablespoons whole wheat flour (I use Gold Medal) 4 teaspoons cornstarch 1/2 teaspoon salt 1 cup water 2 teaspoon mustard (regular) Mix together all dry ingredients until blended. Add water and stir. In a saucepan over medium heat, heat until sauce has started to thicken. Add the mustard and stir until desired thickness has been reached. I find that 2-3 servings of whole wheat spirals go well with this, but you can put it over anything (potatoes, white pasta, veggies, etc.) The nutrition facts based upon 2 servings per serving are about: 115 calories, .354 grams of fat, 600 mg sodium (sort of high), 2 grams fiber, 20.5 grams carbohydrates, and 12 grams protein. They are not vegetarians - my husband does not allow it, but I feed them vegetarian foods most of the time since I'm the one who makes the meals around here Even at dinnertime I serve vegetarian or vegan meals a lot of time time - unless dh insists on barbecuing or something like that. I made some vegan pancakes a few days ago - oaty pancakes with chopped walnuts, dried fruit and just a teeny bit of brown sugar. They LOVED them. Maybe I should serve them 3 meals a day Thanks again. The idea of eating meat now makes him " ick " as well! Even going out, he will choose veggie dishes or at the very worst, fish, but no meat. The more he started to feel good eating this way, the more he wanted to do it! I had been cooking him meat dishes but a few weeks ago I decided to start only serving him veggie dishes - he hasn't complained so far, but i'm sure he wouldn't turn down a nice rare slab of meat if it was offered to him I'll keep on just serving the veggie meals and not bugging him when he does want meat.
