My MIL is overweight and has lost like thirty pounds and kept it off on the Atkins diet. She came to visit last weekend (they live in AZ but passed through here on their way to Washington and are passing through again on their way back) and was telling me how wooooonderful this Atkins diet is and how wooooonderful all her Atkins foods are blah blah blah anyway. ANYWAY i'm sorry got off track. I really do get along with her. SO my whole point was - I would like to fix up a really super enticing vegan/vegetarian meal for them when they pass through again - a low fat one of course, so they could see how healthy AND delicious it is to eat THIS way as opposed to their way of eating. I am a lacto vegetarian - I dont' drink milk but I do eat some foods that contain milk, like this tomato and feta dressing I just got from trader joes, or my favorite veggie casserole that contains a little bit of milk, etc. I would like though to serve them a vegan meal if I can. Anyway, enough talking - does anyone have a really really yummy recipe that they should serve to someone they were trying to show the deliciousness of vegetarianism to? I drain, drain, drain then season the heck out of it - often roasting it & the texture comes out meaty then I toss it into a stir fry. Curry of some form? I just made 'succotash' w/fresh corn cut from the cob - never mind - corn is super carb/bad for Atkins diet. Just stay away from pasta & starchy veggies & you should be fine. Tis the season for fresh veggies & fruits - just go easy on the sugar. Good luck & please share your menu! Also, I just noticed a stuffed pumpkin recipe in the files that looks good too. You could always do stuffed peppers with a stuffing like the stuffed pumpkin stuffing. We don't eat much corn here either but we do eat a lot of whole wheat pasta and some of those starchy veggies like sweet potatoes and summer squash - i'll remember not to serve those to them.
