Hi again -

 

sorry to be late about getting to you about this recipe, but I've had the

@#@#@%#@##@ electricians in for two days and today is the first time since

weekend I've had any real time to play catch-up! ;=) I'm trying to deal with the

recipes, as you know.

 

Okay, this recipe you posted on Monday says at the top that it serves 8. But at

the bottom you say to place the past on *four* individual serving plates. Was

that just an error, or have you mixed up two recipes here???? (It happens - I

made the most interesting fruit and nut loaf once - but you don't want to hear

that LOL)

 

The cream, oil and cheese ingredients look as if they are meant for 8 (thin!)

people, not 4. Also you say 32 oz pasta - that'd be 4 oz each for 8 (hungry!)

persons?

 

I think I'd be safe to change your 'four' plates to 'eight' but wanted to check

;=)

> 1 bn Fresh basil

> 1/4 c Pine nuts

> 4 Garlic cloves

> Salt (to taste)

> White pepper (to taste)

> 3 T Butter

> 2 Shallots,chopped

> 1 T Fresh basil,chopped

> 1 1/2 c Broccoli (tiny florets)

> 1 1/2 c Carrots,julienned

> 1 1/2 c Zucchini,julienned

> 1 1/2 c Snow peas

> 2 c Heavy cream

> 32 oz Angel hair pasta al dente,Cooked

> 1/2 c Parmesan,freshly grated

> In a food processor place the olive oil, the bunch of basil, pine nuts, and

garlic. Blend the ingredients together until a paste is formed. Add the salt

and white pepper, and stir them in. Set the pesto aside.

> In a large skillet place the butter and heat it on medium high until it has

melted. Add the shallots, the 1 tablespoon of basil, broccoli, carrots,

zucchini,

and snow peas. Saut the vegetables for 3 to 4 minutes, or until they are

cooked al dente.

> Add the heavy cream and stir it in. Bring the ingredients to a boil. Add the

cooked pasta and stir it in. Add the pesto to the angel hair pasta and stir it

in

well. Season the dish with the salt and the

It was a typo on my part....Should be 8 servings all around.

 

This dish is not one I eat on a regular basis, but rather one I serve when I

have folks over for dinner and a movie...lol

I was pretty sure it was ;=) But hey, ya never know -

it could have been a mix-up of 2 recipes. As I say,

I've done it myself and the only way it was spotted

was because of the diff in servings LOL

It'd be a big hit, I'm sure! Love pasta primavera! And

it has the advantage of being cooked very very quickly

so that you can spend more time with your guests!
