I didn't have any canned soup, mostly because I don't like it but also because I hate grocery shopping and wait until the last possible minute to do it. Anyway, after surveying the ingredients I had, I came up with the following recipe. It's quick, easy, and very low-fat. How low fat? Don't know exactly since I haven't got a clue as to how to figure that stuff out. I just know that the only fat in the recipe comes from the veg*n milk if you decide to use it and the scant amount of olive oil used to sauté the onion and garlic. Even there you can cut out that fat by sautéing in water instead of oil. Anyway, here it is. If you try it, I hope you enjoy it. God's Peace, Gayle Ingredients: 1 Tbls olive oil 1 med onion - diced 1 clove garlic - minced OR 1 Tbls garlic powder - more or less to suit your taste 3-16 oz cans fat free refried beans 2 tsps ground Cumin 2 - 3 Cups vegan milk (plain variety - not flavored). Add more or less to reach the consistency you prefer. Not Chicken broth or veg broth would probably work just fine too. 1 Cup salsa - hot or mild, your choice. I used mild since my kids were going to be eating this. 1 Cup Nutritional Yeast - more or less to suit your taste 2 Cups frozen corn kernels - no need to thaw Instructions: Put onions and garlic in a Dutch oven and sauté in olive oil until onions are transparent (about 5 - 10 minutes). Add remaining ingredients, briefly stirring after each addition. Stir until all the ingredients are incorporated. Heat through and serve. I've seen recipes that call for a few tablespoons of the stuff, but never a cup. Does it add flavor as well as have nutritional value? (duh, Karen, that's why it's called nutritional yeast!). Of course if you aren't vegan you don't have to worry about the non-dairy and can just use dairy milk. I intended to put veg*n (vegan or vegetarian) but forgot to do that. Sorry.
