Wheat Meat

Just got through eating a Vegan Cookie, why do these grains have to

taste so damn good.

 

Does anybody know how to make good Wheat Meat? Like the kind at Real

Foods Daily.

Howdy Ms. Pat..... I'm not able to read all the post on the board but I am

assuming that lots of people consider grains harmful to the body... is this

what I'm picking up .... I may be mistaken..... cause I did make a mistake

one time but it was so long ago I forgot what it was.... darn...

Howdy back, Tom. I wouldn't say 'lots' of people. Some. One of our members

posted an opinion that grains were not meant for humans and cited a

pamphlet that explained it further. There are lots of theories, but I would

think

that wholegrains in moderation should not be anyone's concern provided that

there is no allergy. It's always that word moderation, though, isn't it! Heh heh

heh. I have, however, not made a study of the subject and base my opinion on

observation and common sense, the latter being not always as common as

thought or as sensible as it might be.

tom, i eat grains, not all the time and when i do they are whole

grains. everything in moderation i suppose...

It's news to me, Tom...I thought whole grains were a good thing.

*sigh* Basically, I don't think we're supposed to eat anything.

Everything seems to be harmful in 1 way or another. How frustrating.

so lets see...... is corn a grain..... as is oats...... and seeds.....

as far as i know corn is considered a grain and not a veggie.in my

religion twice a month we fast from beans and grains for the whole

dayand on thsoe days we cant eat anything made from corn :) i hope

that helps!!

Wheat Meat is just another name for seitan or wheat gluten. The White

Wave chicken-like flavor of wheat meat is just gluten that has been

cooked in the right flavorings. The hard way to make gluten is to knead

water and flour until you have a stringy mass and no carbohydrate. The

easy way is to buy vital wheat gluten from any health food or whole food

store, add water and flavorings per box or bag instructions.

 

Cookbooks by Joanne Stepaniak and by Bryanne Clark Grogan have some good

gluten recipes, but the best book ever is “Simply Heavenly!, the

Monastery Vegetarian Cookbook” by Abbot George Burke. It has recipes to

make all kinds of fake meat, poultry, and fish out of gluten with the

right flavorings. I just noticed, since I pulled the book out to get

the title right, that the introduction section of the book says you can

substitute tofu (frozen, thawed and pressed) for the gluten if you are

sensitive to gluten.

 

Here is a fake turkey recipe that I have made, adapted from the Simply

Heavenly book:

 

Pressure Cooker Unturkey Slices

adapted from “Simply Heavenly, The Monastery Vegetarian Cookbook,” by

Abbot George Burke

 

Raw Gluten:

 

2 cups instant gluten (1 box of Vital Wheat Gluten)

1 ¾ cups water

 

Broth:

 

2 Tbs soy sauce (I use low sodium)

1 tsp brown gravy flavoring (like Kitchen Bouquet or or Maggi)

1/8 tsp sage

1/ 2 cup chopped onion

2 1/ 4 tsp msg (I skip this because of the sodium in it)

1/ 2 tsp sea salt

1/ 2 tsp poultry seasoning

3 Tbs plus 2 tsp nutritional yeast

1 tsp corn oil

2 cups water

 

Put the broth ingredients in a pressure cooker, bring to a boil and

simmer for 5 minutes

 

While the broth is simmering, put the instant gluten and water into a

medium bowl. Mix until the powder is gone. The spongy result is raw

gluten.

 

Put the raw gluten into the broth. Make sure to get some of the liquid

on top. Put the pressure cooker basket or a small plate on top to hold

the gluten down in the broth. Close the pressure cooker lid and cook on

high until the steam release is vibrating like crazy (broth is boiling),

then reduce heat to get the steam release to vibrate just mildly. Cook

this way for 30 minutes, remove from heat for 5 minutes, then open the

lid. Cool the gluten a few more minutes.

 

When the gluten is cool enough to touch, slice thinly. Lay slices on a

broiler pan and spray lightly with oil. Broil lightly. Turn over and

do the same on the other side.

 

The unturkey slices are now ready to be cooked in gravy and served over

bread, potatoes, or stuffing.
