What's for Dinner????

Okay, thinking ahead a bit (it's 4 pm here in Montreal), dinner! What's for

dinner at your house tonight? ;=)

 

I have some tofu that is burning a hole in my chef's apron pocket, as it were,

so we'll probably stir-fry (after marinating) with some mushrooms, peppers,

onions, garlic, ginger, etc. - to be served over brown rice. Or of course it

might

be soup (I made some cauliflower soup last evening) followed by eggs! LOL

 

And you????? Let's hear it!

My dinner last night was Swiss Steaks (Loma Linda vegetarian product)

sautéed in onion and bell peppers, with a brown onion gravy, along with

cream potatoes (Soy milk instead of Moo Juice) and garden grown green snap

beans.

 

Dinner is served at 6:30

Something not very slimming but looks oh so very delicious - Tahini Rotini with

Broccoli and Lemon. A member on another list (fat free vegan) posted it after

many, many requests to do so. It looks yummy and has healthy ingredients - just

a bit higher in fat than I would like it to be. Oh well - just means I have to

run a bit longer tomorrow. :o)

Mine was kinda boring. Taco-seasoned veggie

crumbles in a wheat tortilla with veggies.

 

I was starving after my karate class tho so

it tasted like a gourmet meal ;)

Well, it's Thursday morning here in Holland so I'm working on a different

time scale to most of you. It's great to get some inspiration from what

others are cooking so I thought I'd add my contribution.

 

Tonight were having savoury filled pancakes with a filling of sauteed

sliced mushrooms and chopped onions. After sauteeing the mushroom/onion

mix in a little oil I add a tin of tomatoes and simmer everything until

the tomato juice has almost evaporated and the mixture is quite thick.

Add some chopped fresh coriander (cilantro), a little grated cheese

(optional), season to taste and use as pancake filling - simple and

delicious served with a green salad. It's also nice with some garlic

added to the mushroom mix but I don't happen to have any garlic at the

moment. If you want to, you can top with a little sour cream or plain

yoghurt but it isn't really necessary. We have a houseguest arriving

today from Malta and it is a meal that is quick and simple to prepare

(even quicker if you use bought pancakes) but delicious and quite suitable

to serve to guests. It has always been very popular with everyone I have

served it to.

Here you go, Beth. Let me preface the posting of this recipe by saying that

this IS NOT a low fat or slimming recipe. Having said that, I have to tell you

that it was incredibly yummy and my whole family enjoyed it. I made it for the

first time last night. When I make it again, I will double the sauce recipe. I

loved the sauce before it was put on the rotini and broccoli but after I mixed

it, the flavor diminished a bit. Anyway, here it is. If you decide to have a

wayward night and try it, I hope you enjoy it.

Tahini Rotini with Broccoli and Lemon

from: Vegan Planet by Robin Robertson

 

2 large garlic cloves

1 cup cooked chickpeas

1/4 cup tahini

juice and zest of 1 lemon

2 tbsp soy sauce

1/8 tsp cayenne

1 cup vegetable broth, heated

1 pound rotini

2 cups broccoli florets

2 tbsp roasted sesame seeds

 

In a food processor, combine garlic, chickpeas, tahini, lemon juice,

soy sauce, and cayenne and process until smooth. Stir in broth and

keep warm.

 

Cook rotini according to package directions. Add broccoli during last

5 minutes of cooking.

 

Drain pasta and broccoli. Toss with sauce, sprinkle with lemon zest

and sesame seeds.

i had a veggie quesadilla at a local applebee's. for breakfast i'm having

lo-carb bread put in the toaster (because it's also lo-cal & high in fiber) with

a shitake mushroom pate and tofu-miso spread. for lunch i'm going to a local

mexican restaurant for a friend's going-away lunch.
