Recipe: Helen's Spicy Millet ?

This has come up before on the other list. It adds a good flavor. It

tastes reminiscent of egg yolk and it has some good nutritive qualities

as well. One web site I checked said it contains omega-3 linolenic

acid, an essential fatty acid which is a good thing to supplement since

we don't get enough in our diets. I take DHA supplements to get it.

 

I add lecithin to flax egg replacer:

 

To replace 1 egg use 1 Tbs ground flax, 1 tsp soy lecithin, and 3 Tbs

water all whipped up in a blender or food processor until gooey.

dh found them at the hfs so next time I make this, I

will use it. The recipe is yummy even w/out the

lecithin granules. :)

This is going to sound silly, but I saw lecithin granules at the hfs a few days

ago and wondered what I had seen lately that required them. Couldn't think.

Decided I'd imagined it :=( I am pretty sure it was vegetable lecithin too. Next

time - sounds a good use to use them in egg replacer ;=)

Okay, back to the subject of this millet recipe....well I bought

millet today, how should I serve this...I mean what would you suggest

that I serve it with?

When the dish was first served to me (after which I pleaded for the

recipe), we had millet, mashed potatoes, and salad. Millet is a whole

grain and thus has protein and lots of good nutrition.

 

I sometimes have it as a side dish. Believe it or not, I like it cold

for breakfast.

This is a wonderful recipe! I really enjoyed it. What great flavor.

I had it with a big green salad. Tres YUMMY!
