Does anyone have any cake or dessert recipes that include sweet

potatoes? I've only ever served them sliced and fried but I believe

they can be used in sweet dishes as well as savoury ones.

try baking some slices (peeled first) in the oven sprinkled with a bit of sea

salt and basil, oregano, or tarragon? I just made this recipe up off the top of

my head, and those three were the first three spices I thought that would

compliment it. Maybe oregano first because it might be a nice contrast with the

sweetness of the sweet potato. I tried envisioning thyme with it, but i think

that would be a bit too strong for the sweet potatoes. Rosemary might be

option, a twist on rosemary potatoes, but that would probably have to be used

sparingly, given how pungent rosemary is.

 

and best of all, in keeping with this list, it's low-fat. Just spray the baking

dish with some no-stick spray. :)

 

Hmm, now that I think of it, I might actually try my idea myself. :-D

Hi PennyLane

 

 

 

Usually sweet potatoes can be substituted for any dish that calls for

pumpkin. You could try making sweet potato scones, or sweet potato pie.

When figuring out the nutritional content, however, remember that there's a

difference. Sweet potato, very nutritious as it is, has over four times the

caloric

value of pumpkin. This can add up.

 

When watching my weight (and I usually am), I use quite a bit of pumpkin in

soups, curries, etc., in lieu of sweet potatoes . . .

First of all, I'm pretty sure that sweet potatoes and yams are pretty

much interchangeable in recipes.

 

I DO have some sweet potato dessert recipes (Praline Sweet Potato

Casserole, Sweet Potato Pie, and Sweet Potato Pudding), but I will not

post them for two reasons. First of all they are not slimming recipes.

They include too much sugar and/or fat, and I have not tested them. If

you want to e-mail me privately and have a non-slimming party, I will

send you the recipes.

Yes, there are some good sweet potato recipes around - but I think it was a

dessert recipe that was tried and true that was sought. I looked in one of my

books and found a stunning one using kumara in cake - but of course I hadn't

tried it and of course <siggghhhh> it was sooooo fattening (which is why I had

never tried it, I guess LOL).

 

I had a look at the site Judy recommended, and here are my comments in

order:

 

1. This is not a vegetarian site.

2. It is not in any way a 'slimming' site!

3. The nutritional info for recipes is, however, displayed at the end of each

recipe.

4. It has some very very pretty pictures.

5. I must get more creative with sweet potatoes!
