Guest guest Posted June 7, 2005 Report Share Posted June 7, 2005 Kale recipe Kale - 3 cups chopped (or whatever you like) 4 garlic cloves (or whatever you like) Tofu 8 oz (or...you know....) 3 Tbls. toasted sesame oil (the big flavor enhanser - takes some of the bitter away) 3 Tbls. Tamari or soy ( I prefer tamari) Put cleaned and chopped Kale in fry pan with sesame oil - let wilt - put low for 10 minutes with cover. Add chopped garlic and tofu and tamari - cook 5 minutes. I found that it didn't need any salt added though, but you can add to taste. And I cut the oil required in half and it was more than enough. It was really easy to make too. Cheers! Carrie CHILI SPRING GREENS 2 pounds kale or spring greens, washed and chopped (I used kale) 4 tbsp. water or vegetable stock 2 tbsp. peanut oil 1 medium onion, finely chopped 1 medium tomato, skinned and chopped finely 1 chili pepper, seeded and chopped finely sea salt and black pepper to taste 4 tbsp. ground peanuts 2 tsp. fresh lemon juice Put the chopped greens in a large saucepan with the water or stock and cook gently, covered, for 10 minutes until tender. Meanwhile, in a medium frying pan, heat the peanut oil and saute the chopped onion, tomato and chili pepper for 2-3 minutes. Place the sauteed onion mixture on the greens, but do not stir it in. Season to taste with salt and pepper. Sprinkle the ground peanuts on top. Cover and steam gently for a further 10 minutes. Add the lemon juice, stir, check the seasoning and serve.
