I am looking for a good way to season this dish without using the hamhock or tons of salt and pepper...any ideas? THANKS! " You could try liquid smoke and low sodium soy sauce or even Bragg's Liquid Aminos (tastes like soy sauce but contains essential aminos acids). As usual, I have a ton of green bean recipes on file, but none " tried and true. Guest guest Posted June 26, 2005 Report Share Posted June 26, 2005 Hi everyone , I am new to the list but wanted to chime in about a green bean recipe I love.It is a south Indian dish and is great served with a yogurt cucmber salad. I eat Indian food 75% of the time ,all the spics are wonderful. I don't know how anyone can be vegetarian and not eat Indian food it so yummy Pauline Dal=dried peas/beans in indian cuisine Paruppu Usili Cluster beans 1/2 kg (I use greenbeans from grocery tastes same to me) thuar dal 1/2 C (dried bean) cumin seeds 1 tsp red chilis 10 (I use dried) coconut grated 2 tbls (I don't use every time I make it just when I happen to have some on hand) mustard seeds 1/2 tsp curry leaves 3-4 salt per taste oil tamarind extract thick (I just use a small hunk of tamarind soaked in hot water for 20 minutes and squezzed , you can buy tamarind paste from Indian grocery store too which is less time consuming) soak dal in water 1 hour cut beans into small rounds about 1/4 " cook till soft in water and drain cut beans into small rounds about 1/4 " cook till soft in water and drain grind the dal along with chilis cumin seeds coconut and salt to a coarse paste (I use a small foodprocessor) heat a pan add oil fry mustard seeds till they pop add curry leaves and beans fry 1-2 minutes add ground paste with tamarind extract and cook till dry adding more oil or water if it sticks.
