We planned it this way to avoid having to spend money on restaurant meals 3x a day while we're there. Can anyone give some simple recipe/meal ideas? I'll have a range, oven, and microwave. I've already put veggie burgers and veggie dogs on my shopping list, and items for salads, but I could use a few other fun ideas. Guest guest Posted July 17, 2005 Report Share Posted July 17, 2005 Hi Patty, I figure the quickest and easiest - and often the most fun - thing to make in such circumstances is a pasta dish with all your favourite fresh veggies tossed around in a pan with garlic or whatever floats your boat. Cook up up the pasta - use, say, those colourful ones that come in mixed shapes or, if you're serious about it, whole wheat shells or penne - then drain and toss in with the veggies, top with your favourite cheezy topping, etc. If life is too hectic for that, cook up some rice (okay, it's a holiday, use the quicker cooking stuff and you're forgiven) and toss the rice into the veggies for a fat-free 'fried' rice. Veggies cooked and raw in pita pockets with hummus? Pita pizzas? And then there's all that fruit salad . . . Er, I don't know about the brands you are using, but soy burgers and sausages and hotdogs can vary quite a bit in fat content - just a hint. Have a great time- and tell us about it when you get back. Boil the water, add the regular brown rice, (add lentils or veggies if you want) Cover and return to boil. Turn off the burner, wrap the covered pan in a couple beach towels. If you're worried about it spilling, set it all in a box. The idea is to retain the heat. 2 hours of resting like this, and the rice is done.cool house too. The book is full of ideas for simple living gleaned from around the world. What a great book, though for some reason, last time I looked for it, it was only available through the religious bookstore.
