Delicious Calcium-Rich Dairy-Free Vegetarian Recipes 2 cups cooked quinoa (or millet)1 cup cooked wild rice2 tomatoes -- seeded and diced3/4 cup chopped parsley1 cup coarsely chopped dried figs1/2 cup chopped green onions Dressing 1/2 cup lemon juice1 tablespoon dark sesame oil2 cloves garlic -- minced1 teaspoon salt1/2 teaspoon ground cumin1/2 teaspoon ground coriander3/4 cup toasted slivered almonds1/2 cup chopped walnuts (optional) In a large bowl, combine quinoa, wild rice, tomatoes, parsley, figs, and green onions. In a small bowl, whisk together lemon juice, sesame oil, garlic, salt, cumin, and coriander. Pour over grains and vegetables; toss together. Refrigerate salad until cold.
