Pina Colada Jam A favorite! Only 15 calories per tablespoon. Good as a spread for gluten-free bread or as a sauce over smoothies. 1 20 oz. can crushed pineapple2 1/2 cups pineapple juice1/4 cup tapioca6 Tbsp. unsweetened coconut1 tsp. vanilla Place crushed pineapple and juice in a 2 quart saucepan. Add tapioca and allow to soften for 5 minutes. Cook over medium heat. Stir regularly until mixture is boiling and tapioca has turned clear. Add remaining ingredients. Chill.
