I can hear you saying, but oats have gluten in them and should not be eaten. This is correct to a point. When my son was at OHSU for celiac spur I was lucky enough to be able to speak with at length a Dr. from England who was over here doing research on the way we diagnose and treat Celiac. This is what she told me. When you are first diagnosed with Celiac or Gluten intolerance, your insides will look like raw meat. very sore and tender. At this point everything will hurt. So you take out all gluten. but in 6 months - 1 year when all this has healed it is okay to eat oats as long as you are healthy. IF you become sick or very stressed out, avoid oats again for a while. All other countries who treat celiac spur, canada, Europe, ect. all okay oats. it is only in the USA that they do not. Lets put gluten on a scale. rice and corn will be- 1. Oats will be 3-4. and Wheat, rye, barley 10+. Now lets pretend they are sand paper. If you use a 1 on your arm it will not do anything. If you use a 4 on your arm again, it may tickle but that is all. but if you use a 10+ on your arm it will become red and start to hurt. Now in this irritated condition use a 4, it will keep it read and irritated, it will not be able to heal, but if you wait until it has healed up again and use a 4 on it, again nothing will happen. this is the way it all works. but when you are sick and or stressed out, the lining in your stomach and intestines becomes inflamed, so the Oats would irritate it again.
