C crystals. This ingredient is added as a component in the leavening process. Baking soda used alone is not effective; it must be chemically balanced with an acid. The cookbook author is choosing to use the unbuffered Vit. C instead of vinegar or lemon juice (although either of those ingredients would work in her recipes). She does note that some brands of Vitamin C crystals contain corn, so check carefully if you have a corn allergy. Happy Cooking!
