Guest guest Posted January 3, 2002 Report Share Posted January 3, 2002 Hi all, I've just joined this group because I have multiple food allergies and often have to cook things that are vegan and gluten free. I do eat some gluten grains, but am allergic to wheat. I have to rotate my other grains, meaning I eat different ones on different days, because if I eat one (say rice) every day then I become allergic to it. So some days I'm trying to bake things with barley flour, other days it's rice or millet or sorghum. I have some questions that I'd like to ask. I welcome all help on any of these. 1) Does anyone else here use DariFree to make puddings? I am apparently doing something wrong because sometimes when I make the puddings they become watery very quickly. The water separates from the pudding and is very unappetizing. I can't figure out what the problem is. 2) Does anyone have any good recipes for baked goods using millet or sorghum flour? I'm not having the best luck with these. I can make a halfway decent millet yeast bread, but the cookies, muffins and cakes I've made have not been the greatest. I haven't yet made anything with the sorghum flour that was good. Not all the recipes are vegan (or even vegetarian) but they are all GF and casein free as well. Many people there make use of the darifree for their milk replacer. I personally don't because I live in Northern BC and it is not readily available. I find coconut milk (in tins from the wholesale store) makes the most wonderful dairy free puddings. HOMEMADE PUDDING MIXES Vanilla Pudding Mix 3 cups soymilk powder or rice milk powder4 cups sugar1/2 tsp nutmeg1 tsp salt3 cups cornstarch1 vanilla bean, ground to a fine powder Mix all, and store in an airtight container. To prepare, mix 1/2 cup of mix with 2 cups soymilk or rice milk.Heat at medium boil, stirring constantly, until thick. Cool, then serve. ---- Chocolate Pudding Mix 2 & 1/2 cups soymilk powder or rice milk powder5 cups sugar3 cups cornstarch1 tsp salt2 & 1/2 cups cocoa powder Mix all, and store in an airtight container. To prepare, mix 2/3 cup of mix with 2 cups soymilk or rice milk. Heat at medium boil, stirring constantly, until thick. Cool, then serve. ---- Coconut Cream Pudding Mix 3 cups soymilk powder or rice milk powder4 cups sugar1 tsp salt3 cups cornstarch1 1/2 cups shredded unsweetened coconut1 tsp coconut extract Mix the extract and the shredded coconut in a small bowl until the extract is absorbed. Add the coconut to the other ingredients.Store in an airtight container. To prepare, mix 2/3 cup mix with 2 cups soymilk or rice milk. Heat at medium boil, stirring constantly, until thick. Cool, then serve.---- Butterscotch Pudding Mix 2 cups soymilk powder or rice milk powder5 cups brown sugar, packed1 tsp salt3 cups cornstarch Mix all, and store in an airtight container.
