New, with some questions

Hi all,

I've just joined this group because I have multiple food allergies and

often have to cook things that are vegan and gluten free. I do eat

some gluten grains, but am allergic to wheat. I have to rotate my

other grains, meaning I eat different ones on different days, because

if I eat one (say rice) every day then I become allergic to it. So

some days I'm trying to bake things with barley flour, other days it's

rice or millet or sorghum.

I have some questions that I'd like to ask. I welcome all help on any

of these.

1) Does anyone else here use DariFree to make puddings? I am

apparently doing something wrong because sometimes when I make the

puddings they become watery very quickly. The water separates from

the pudding and is very unappetizing. I can't figure out what the

problem is.

2) Does anyone have any good recipes for baked goods using millet or

sorghum flour? I'm not having the best luck with these. I can make a

halfway decent millet yeast bread, but the cookies, muffins and cakes

I've made have not been the greatest. I haven't yet made anything

with the sorghum flour that was good. Most things have been kind of

gluey in the middle.

Thanks for any help,

Sharon

Welcome. I invite you to also join as at gfcfrecipes . (a group

I co-moderate). Not all the recipes are vegan (or even vegetarian) but they are

all GF and casein free as well. Many people there make use of the darifree for

their milk replacer. I personally don't because I live in Northern BC and it is

not readily available.

I find coconut milk (in tins from the wholesale store) makes the most wonderful

dairy free puddings. I'd be happy to share those recipes with you if you like.

Blessings

Your welcome LaDonna I hope you enjoy them. I am always on the lookout for

great mixes that I can make up so that I can have some convenience type foods

around that are still vegan and gf.
