If you don't have any on hand that won't help you today, but for this moment you could try using some flaxseed gel or some agar agar. Slippery elm powder is made from the inner bark of the elm tree, I don't know if they use the same parts to make the tea, or if they do, if it is powder fine enough for the purpose of baking. I guess you could try. I use it measure for measure in comparison to the xanthan gum. I have the recipe for making flaxseed gel to replace eggs for binding, but I can't put my hands on it this very second. It's been a loooooong day and promises to be so again tomorrow. Guest guest Posted January 11, 2002 Report Share Posted January 11, 2002 The flaxseed gel recipe is: 1 Tbsp. flax seeds 1/4 cup water Blend until seeds are ground and mixed with water. *That's easier said than done! The instructions usually call for placing in a blender, but I don't think they grind up very well this way. Instead I use a small coffee/seed grinder. . .and then use 1 Tbsp. of the ground flaxseeds and mix with 1/4 cup of very hot water.
