Spinach Salad with Pineapple Dressing

1/4 cup sliced pineapple

1 1/2 Tbs. fresh lime juice

1/2 tsp. honey

1 Tbsp. corn oil

Salt (and pepper, optional) to taste

4 cups spinach

1/2 medium cucumber - pared and thinly sliced

1/2 cup sliced radishes

 

Puree pineapple, lime juice, honey, and oil in blender or food processor

until smooth. Season to taste with salt and pepper. Place spinach, cucumber,

and radishes in salad bowl. Add salad dressing and toss to coat.

 

Serves 2.
