Christine's post reminded me that I am looking for a quicky and easy gf falafel recipe. All the recipes I have found without flour require soaking the dry beans overnight and then grinding them in a food processor or meat grindern. Does anyone have a quicker recipe? I found one recipe that used dried fava beans instead of garbanzo beans, but the process looked too involved for what you are looking for (soaking the beans and grinding them). I hope I will be able to find a GF mix sometime, because I'm really going to miss falafels if I don't! I used to love to go to Greek restaurants, and I always ordered the falafel and hummus plate. So now that I'm GF, of course the pita bread and falafel are out, and the only thing I'm down to is hummus, which doesn't doesn't sound too appetizing all by itself on a plate I still eat hummus at home now, but I serve it with rice or corn cakes, or rice pancakes instead of the pita.
