Guest guest Posted May 4, 2002 Report Share Posted May 4, 2002 Corn Millet Porridge 1/2 cup millet 1/2 cup cornmeal 3 1/2 cups boiling water 1/2 cup cool water 1 tsp. salt 1/2 cup coconut 1 cup chopped dates Mix the cornmeal into the cool water. Then add millet and salt. Stir this mixture into the boiling water and continue stirring as the cornmeal thickens. Cover and allow to lightly simmer for 2 hours. Remove from heat. Add the coconut and dates. Allow the mixture to sit (covered) for 15 more minutes. Stir again before serving. *This is a great crock pot recipe. Some of those sources mistakenly say that celiacs must avoid millet. There are four grains that celiacs must avoid, they are wheat, oats, rye and barley. There are a few kissing cousins of wheat that must be avoided too, just variants of wheat anyway, like Spelt and Kamut. Millet is OK for celiacs, and people who say it is not are simply mistaken.
