Guest guest Posted May 21, 2002 Report Share Posted May 21, 2002 Garbanzo Bean Muffins 1 ½ c. garbanzo bean flour 2 tsp arrowroot 1 tsp. Baking powder 1 tsp baking soda ¼ tsp sea salt ½ c. sugar ½ c. walnut oil (or other oil) 2 tsp vanilla 1 c grated yellow squash, zucchini or carrots ½ c seltzer water (may need to add more to make it " pourable " ) Optional: ½ cup of chopped walnuts or other nuts Mix all ingredients – Pour into muffin pan.
