Pecan Patties

 

1 cup pecan meal (or 1 cup whole pecans, ground fine in food processor or

blender)

1 cup quinoa flakes (or substitute cooked millet)

1 small onion, diced

1 1/2 cups soft tofu, whipped

1 cup soy cheese (cheddar style; archival recipe or commercial)

 

Combine and mix ingredients (except Tomato Sauce). Use a scant 1/3 cup measure

to make patties. Drop into a nonstick fry pan sprayed with olive oil; flatten

with a spatula. Brown on both sides over medium-low to medium high heat (about

5 minutes first side, 3 - 4 second side). Spray pan with olive oil before

frying each batch. Prepare Tomato Sauce (or use store-bought spaghetti sauce).

 

 

Tomato Sauce

 

1 - 29 oz. can tomato sauce

1 tsp. dried oregano

1 garlic clove, crushed

Salt to taste
