Rose's Melty Cheese

Rose's Melty Cheese

Source: Rose @ Christian Vegan Cooking

 

In a blender add:

 

1/2 c cashews

2 T cornstarch

1/2 sweet red pepper

1 1/4 t salt

2 T fresh lemon juice

1 c water

2 T nutritional yeast flakes

1/4 c oatmeal flakes

1 t. onion powder

1/2 t butter flavoring (opt)

 

Blend well for several minutes. Add to a pot that has 1 1/2 c boiling water

and cook until thick. Serve warm as a dip or over haystacks. Also can be

used as a cheese substitute over enchiladas or lasagne.

 

This is an old standby that has been altered to fit my tastebuds....Rose

Hey, this has oatmeal flakes in it! What is the best gf substitution?

Woops! Sorry, Lynn. . .I missed that ingredient. Instead of oatmeal flakes

I would use an equivalent amount of millet (cooked) or quinoa (either cooked

whole grain or flakes). There isn't much in this recipe and the oatmeal

here is used for bulk/body. I've made this recipe before and did the

substitution automatically. . .and didn't realize it wasn't " gf approved "

when I posted it. Hope this helps. ~ LaDonna

Since many people who are GF for things like allergies or celiac are now finding

they can use oats (which don't contain gluten but a related protein) it may be

possible to use this recipe as is. We have successfully added oats back into

our gf diet here BUT if oats are out for you, you probably could also try

buckwheat or poha flakes but be sure to soak them in the water and lemon juice

for about 10 minutes before cooking.
