I've been eating a vegan, gluten-free diet for most of about 17 years. I say only " most of " because it took me a long time to get totally gluten-free. I spent a long time on what amounts to a low-gluten diet, which was better than a high-gluten diet, but the NO-gluten diet is definitely where I need to be! :-) I have developed (what I think is) a fabu recipe for vegan, gluten-free burgers. Anyone like to see it?? :-) I'm having one right now... on two small teff flat breads I made in the non-stick frying pan. With a gluten-free yellow mustard and ketchup, some avocado instead of butter or margarine, and some fresh leaf lettuce, it is a truely delicious lunch! (Am I making you hungry yet??) Aside from gluten, I also have to avoid corn although I seem to be able to get away with a little corn at times. I have wondered about soy, but haven't had any clear signals about that. My Son right now has to stay off of corn so I can sympothise with you on how are this can be. I thought Teff was gluten, am I totally off on this?
