It is my understanding that it is gluten-free. I have checked on

has it as gluten-free. I have also checked with Bob's Red Mill

I'd check with the kitchen before making that decision. We have

a lovely vegetarian Ethiopian restaurant close to us here in

Vancouver that SAYS their injera is made from teff, but it looks

AWFULLY white to me! I think it may be a combination of teff and

wheat flour. I ate in on their assurance that it was made from

teff, but I didn't think to ask if there was any wheat flour in

it too. It sat like a lead ball on my stomach for hours. That

was back in the days when I was less careful than I am now.

 

One Ethiopian place I ate in Washington DC, they made two

different types of injera... one was for actually eating with

that was pure teff (very brown and flavourful) and the other type

was made as a liner for the plate that wasn't intended really to

be eaten, more just for decoration (it was quite white and less

flavourful). The whiter one was made with wheat flour. So, I'd

recommend checking with each individual establishment.

Well... blame like that, I can live with. :-)

 

But really, YOU are to blame Dan! YOU are the one who made the

decision to do the work and is doing it. I'm JUST the

cheerleader... you're carrying the ball!! ... and winning, I

might add. :-)

 

 

Here's the burger recipe (finally!)

 

Deb’s Squash-lentil-potato patties

 

Weigh out ½ lb. of brown lentils and soak over night. Drain and

discard water.

 

Grate 2 pounds raw squash (I usually use either zucchini or fresh

pumpkin, depending on what is cheapest and available in season)

and squeeze liquid out with your hands and a colander. Save the

liquid for use in soups, cooking rice or baking.

 

Sauté 1 cup finely chopped leek with 4 cloves pressed garlic

 

Puree soaked, drained brown lentils with

 

½ lb. potato,

 

½ cup carrot or red pepper,

 

½ cup celery or green cabbage,

 

1 tsp. paprika,

 

1/8 cup gf tamari or soy sauce,

 

¾ cup fresh or 1 tablespoon dry parsley,

 

1/3 cup flour (I usually use brown rice flour),

 

2 tablespoons ground flax seed,

 

the squeezed-squash and the cooked onion/garlic.

 

Puree the mass until it is approximately like cookie dough.

 

Press into patties, bake at 350 degrees F for 30 minutes on a

greased cookie sheet. They freeze great. Makes a couple of dozen

or so, depending on the size of your patties.

 

NB. This recipe is very low in salt and spices, which to me is

fine because I add ketchup and mustard when I eat one. If you

like your burgers with more zip, I would suggest adding some

chili, ginger, more salt, etc. to the wet mixture, as you wish.

Dear Deborah,

 

Would that be Vancouver Wa or Vancouver Canada?? We have just recently

moved to Vancouver WA, so I am always on the look out for restaurants

and new people.
