And that they don't work well when mixed with other beans? I forget what they said to me. I tried to cook them last night and accidentally got distracted while they were on the stove...yep, I burned them. So I haven't had a chance to really taste them yet. Guest guest Posted August 15, 2002 Report Share Posted August 15, 2002 Dan I can't imagine why they wouldn't be good mixed with other varieties of beans (unless the cooking time is different). I often mix four or five kinds of beans together for chili or soup. In fact I buy an 18 bean soup mix from a local GF dealer and it has 2 kinds of white beans in it! As to what to do with them...that depends on what they are. White kidney beans or italian cannelli are really great made into sandwich filling or as a bean dip mixed with avocado, veganaise and seasonings. (dry) small white beans (sometimes called Navy beans, or Northern white beans) 1 small onion, diced 2 cloves garlic, minced 1/3 cup molasses 1/3 cup maple syrup 1 tablespoon mustard powder 1/8 cup balsamic vinegar ground pepper 4 cups of water, approximately 2 tsp. salt Soak beans over night in pot with cold water. Discard water in morning, and drain beans. Cover with 4 cups of water, or more as needed. Bring to a boil and skim off the thick, frothy stuff that rises to the surface. Reduce temperature to low and add the rest of the ingredients except salt. Simmer covered, stirring occasionally until beans are very soft and the sauce thickened, about 4 to 6 hours. When cooked, add salt and stir in. This helps keep the beans tender. Can be done is a crock pot. I usually double the recipe and make a BIG batch and keep serving sizes in the freezer. For about the last 8 years she has run a homebased business which sells products for those who must follow the GF (gluten free) diet. Last month she and two other local christian people opened a store front called the country emporium. She carries a wide variety of Dan-D-Pak and other allergy sensitive foods. I just refer to her as my GF dealer (wink) For example, we stopped there yesterday to buy buckwheat groats and sesame seeds which she grinds for me in her mill. The children wanted trial mix so we bought gluten and dairy free things like banana chips, sunflower seeds, papaya, roasted soy beans, roasted green peas, carob chips and fruit juice gummi bears and mixed them all together. Viola, Trail Mix. Unfortunately it was a scorcher yesterday and the carob chips all melted so that the children looked like they had been bathing in very dark mud but they had lots of energy - grin!
