You can top/add soy butter, veggies, soy cheese, etc. (best thing is you can get them at Wendy's when you are on the run!). Au Grautin - thinly slice, arrange in casserole dish. Add a bit of soy milk, soy cheese, salt and pepper to taste. Cover and bake til tender. Scalloped Potatoes - thinly slice, arrange in casserole dish. Add a bit of soy milk, soy butter, salt and pepper to taste. Cover and bake til tender. Mashed - boil potatoes, then mash with a bit of soy milk, soy butter. To add more zest, seasoned salt or (dry) salad dressing mix like Good Seasons. They really taste good with liquid brewer's yeast, too. Guest guest Posted September 13, 2002 Report Share Posted September 13, 2002 >does anyone have any good recipes that involves potatoes?? >dan One of our favourite ways is to slice them with a french fry maker, and BAKE them in the oven, 350 F for about 40 minutes... we call them Pageau French Fries! :-) They can be brushed with oil before baking, and sprinkled with seasonings, or done just bare naked... (tee hee!) and eaten with gf ketchup When I bake potatoes, I put them on shishkabob skewers to help them bake faster... the metal rods promote heating inside the potato. I do maybe a dozen at once, then eat them over the next few days like snack, just cold. Steamed, pressure cooked, mashed or in chunks...as potato salad with tofunaise, in soup, scalloped with almond milk (yum!)... Make sure that what you cook has had all traces of green under the skin removed. When you find a green patch, cut deeply under it into the potato to make sure you get all of it. Even if the potato looks as if it is green-free from the outside, scrap it a bit here and there (if you want to leave the peel on) to make sure there is no green hiding underneath (green develops if the potatoes have been exposed to the light) ... that green is horribly bitter and toxic.
