Guest guest Posted October 9, 2002 Report Share Posted October 9, 2002 Chocolate Cherry Almond Biscotti From Special Diet Celebrations by Carol Fenster Gluten, Dairy, Egg, and Corn Free 1c brown rice flour 1/2 cup potato starch 1/3 cup tapioca flour 1 1/2 tsp guar gum 2 tsp baking powder (featherweight) 1/2 tsp malt 1/2 cup unsweetened cocoa 1 tsp Folger's instant coffee 3/4 cup organic sucanat 1/2 cup flax mixture (flax seeds & water) 1/3 cup canola oil 1 cup sliced almonds 3/4 cup tart cherries (Just Fruit) Preheat oven to 350F mix all above ingredients together Form logs 2 " wide, 1/2 " thick and bake 20 minutes Remove, cut diagonally into 1 " slices, place on cut side on baking sheet. change oven temp to 275F Bake 10 minutes, turn slices, and bake 10 minutes more. turn off oven, leave in for 10-15 minutes with door closed. cool and eat. yum! I have heard of rice malt (like in the Imagine Foods Rice Milk) but was told that barley was used in the process to make the malt anyway.
