Guest guest Posted October 29, 2002 Report Share Posted October 29, 2002 Zucchini Soup 2 cups water 2 tsp. onion powder 2 Tbsp. cornstarch 1 - 1 1/2 tsp. salt (or to taste) 2 medium zucchini 1 medium onion pinch of cayenne pepper 1/2 cup raw chopped cashews 2 Tbsp. Bill's Best Chicknish Seasoning (or alternative chicken style seasoning) 1 medium crook neck squash 1 tsp. Lawry's seasoning salt water from steamed vegetables Wash the cashews and dry them in a 200 degree oven. Blend a small amount of water and cashews until smooth and creamy, about 2 - 3 minutes. Use a small amount of water at a time, making it easier to blend the cashews into a smooth consistency. Add remaining water and seasonings. Steam cut up vegetables for 5 minutes, then add to blender. Use 2 - 3 cups of the water from the steamed vegetables to blend. Pour into kettle and thicken on stove.
