I just steam it until the leaves pull off easily and the " meat " is tender on the leaves. I hope this helps some!! Guest guest Posted October 31, 2002 Report Share Posted October 31, 2002 Oh, you don't need to peel it! They are the easiest things in the world and soooo wonderful. SIMPLE: Cut the bottom stem off so that it sits flat (leaves pointing up). Put it in a steamer basket in a large pot with boiling water and cover (do not let it sit in the water, unless you put oil in the water, or it will be waterlogged and disgusting - you should really use a steamer basket). Cook about 45 minutes to an hour. Voila. Serve with your favorite dip - traditionally served with hollondaise, which uses an egg, but you could make a mock hollondaise. Unfortunately, I do not have a recipe (we do eggs), but something with margarine and butter would do the trick. FANCY: Again, cut the bottom stem off so that it sits flat, then cut the top tip of all the major outside leaves off (so that you don't get " stuck " with them and that it looks pretty.) Proceed as above. Do you know how to eat them? You take a leaf, dip it, then scrape the soft part against your bottom teeth and throw the rest of the leaf away. Continue to eat all the leaves like that, until you get to the choke (hairy looking stuff which covers the heart). Remove the choke carefully by scraping it gently off with a spoon. You are left with the heart, which is the best part of the artichoke. Can you tell I love artichokes? I'll have two for supper, with nothing else. My husband and kids laugh at me. Guest guest Posted October 31, 2002 Report Share Posted October 31, 2002 This is what I do: Cut the stem so that the bottom can sit flat. Then use scissors to trip the pointy tops off the leaves. Place in large pot with enough water to cover, add peppercorns, drizzle in a little olive oil, and slice a lemon into quarters, squeeze and drop into the water. Bring to a boil, then cover and reduce heat to simmer, simmer until soft (about 20 mins). Take the artichoke out and drain it (I leave it upside down in a strainer for a while). Once cool, use a spoon to scoop out the thistle/choke part in the middle. I make a dip with mayo (vegan), spicy coarse mustard, salt, lemon juice and garlic. Put it in the hole in the middle where the choke was removed. Dip the leaves and eat them, then eat the heart when all the leaves are used up.
