I'm having a terrible time with making gluten free bread because I feel like it's so unhealthy. I bought Bette Hagman's bread book and while some of her mixes are better than others, I still feel like there is so much starch in all of them. Does anybody have a good tasting bread recipe that is truly healthy? I would love to be able to have sandwiches again, but I would much rather have healthy bread, if possible. Thanks for your help! Guest guest Posted November 1, 2002 Report Share Posted November 1, 2002 I don't bother trying to do loaf breads anymore...I feel the same way as you were saying about all that refined starch... I want whole grains as much as possible. Mostly now, I just make flat breads with whole grain and water. I've found the best one seems to be whole ground buckwheat and water, mixed to the consistency of pancake batter and poured in small amounts onto a non-stick pan for a few minutes both sides. These are quite delicious and simply whole grain. Whole ground teff is also very good. If you eat oats, whole ground oat groats is awesomely good. They are fragile until they are cooked, so flip carefully, but after they are cooked, they can be used as buns for vegan burgers or tortillas, or even as slices of bread for peanut butter and jam or for sandwiches. They are very flat! :-) But they are very tastey, softly chewy, nice brown colour... very palatable (imo) just as they are. One certainly CAN add yeast. Because it's gluten-free flour, one would have to also add some guar or xanthan gum to get the leavening to hold. (shrug) I don't bother.
