Guest guest Posted November 24, 2002 Report Share Posted November 24, 2002 Carrot Pie Source: Natural Lifestyle Cooking *if you don't like pumpkin! 1 cup dates 2 1/2 Tbsp. cornstarch 3/4 tsp. salt 3 Tbsp. soy flour 1 tsp. vanilla 3 Tbsp. oil 1 3/4 cup cooked carrots 1 1/2 cup soy milk (or alternative/almond or rice) Whiz all ingredients in blender. Pour into pie plate that has been lined with crust. Bake at 350 degrees F. until set, about 35 minutes.
