BlankCream of Celery Soup with Tofu

 

This creamy soup is not only low in fat but low in calories as well.

 

1bunch celery

1 onion

2 tablespoons vegetable oil

4 cups water or vegetable stock

sea salt (as required)

freshly ground pepper (as required)

1 teaspoon dried mixed herbs

1 cup (1/2 lb) soft or medium tofu

2 tablespoons chopped parsley

 

Scrub and chop the celery. Chop the onion. Sauté both in the oil for a few

minutes. Add the water or stock, seasoning and herbs. Bring to the boil,

then lower the heat, cover, and simmer for about 20 minutes. Pour into a

liquidizer and leave to cool slightly. Add the tofu and blend thoroughly.

Pour back into the saucepan and reheat gently. Serve with topped parsley.
