Guest guest Posted November 26, 2002 Report Share Posted November 26, 2002 BlankCream of Celery Soup with Tofu This creamy soup is not only low in fat but low in calories as well. 1bunch celery 1 onion 2 tablespoons vegetable oil 4 cups water or vegetable stock sea salt (as required) freshly ground pepper (as required) 1 teaspoon dried mixed herbs 1 cup (1/2 lb) soft or medium tofu 2 tablespoons chopped parsley Scrub and chop the celery. Chop the onion. Sauté both in the oil for a few minutes. Add the water or stock, seasoning and herbs. Bring to the boil, then lower the heat, cover, and simmer for about 20 minutes. Pour into a liquidizer and leave to cool slightly. Add the tofu and blend thoroughly. Pour back into the saucepan and reheat gently.
