chocolate chip cookies...please!

Hello all,

 

Chocolate chip cookies, I gotta have more!

You can bake 'em in the oven, buy 'em at the store...

But whatever you do, have 'em ready at the door...

And I'll love you 'til I dieeeeeee!!!

 

I am searching for a gluten-free chocolate chip cookie recipe. Does

anyone have any leads on 1) said recipe, 2) gluten-free chocolate

chips (tropical source? anyone?), and 3) a gluten-free vanilla

extract source??? I promise to sing the above song to you live and in

person should we ever meet if you give me the answers to these

questions! Or, I could promise NOT to sing it to you. *grin*

When I have more time, I will check the archives at GFCFRecipes for you. There

must be a dozen different chocolate chip cookie recipes which are GFCF.

I won't require you to sing to me but I'd be more than happy to help you with

one of the questions anyway : )

Cook Flavoring Company has a gf vanilla and other flavorings as well. I called

them be verify the " gluten status " . They have a website as well with the story

of why Bourbon Vanilla got its name. I thought it was because it had something

to do with liquor but it doesn't--it has to do with the island those vanilla

beans are grown on. Interesting, I thought. Their phone number is

1-800-735-0545. This bottle of vanilla that I got of theirs is vanilla powder

and it was pretty " spendy " . I believe there are less expensive sources but I

can't give you any leads on that.

 

Now, the other questions...can you substitute a flour mix for the flour and flax

gel for the eggs? I have found 1 Tbsp. flax gel per egg to work well in muffin

recipes, etc. If you need a little more liquid, add a little soy or rice milk.

In some recipes I have found that if, for example it calls for 2 eggs, I put 2

Tbsp. flax gel in a glass measuring cup, then add enough soy milk to equal 1/4

c. per egg (1/2 c. in our example).

 

As for the chocolate chips....I use carob so I am not sure I am much help there,

sorry. I guess you'd just have to read the ingredient list and see if there is

anything that sounds suspicious. I called the American Dietetic Association and

got a couple of books from them with lists of things that have gluten in them

and also casein. I also contacted the Celiac-Sprue Foundation and got their list

of " no-no's " . If anyone is interested in more info, please reply.

Thanks for the tips! I shall check out Cook Flavoring. We do eat

eggs, so that's not a problem, but the flax gel is a new one to me

and I shall keep it in mind for vegan cooking. !!

 

I've heard from other people with Celiacs that they can have problems

with carob. Anyone run into this? Oh the multilevel complexity of

food allergies. Fun! Entertaining! (whoops, sorry. caffeine must've

kicked in).

 

BTW, singing the song is fun! Fun, I tell you. It must be sung very

loud and off-key. But I'll respect your ears and not sing it at your

request. ;)

No Raven, it's a different group from this one, that I also co-moderate. We

several thousand recipes in the archives there which are necessarily vegan but

which are GFCF and easily modified to be vegan. You are welcome to join of

course, but the list is higher traffic than this one.

I would be interested in knowing more about this. I know that the only carob

chips I can find are made with malt barley syrup so celiacs would have a problem

with them. But what about the plain, powdered carob powder. That is what I

usually use and we don't seem to have trouble with it. I do, though, want to

make sure, as sometimes certain foods can be harmful when used over time.
