I think I will stay with agar agar. At least I know where it's been. It appears gluten free, but I am not sure of the derivation of the potassium citrate or the adipic acid. Either might be an animal source. I was using it in a recipe and was missing another ingredient so maybe that was a good thing. Thanks for the info. If you have a health food store or an asian market near to you, see if you can get some agar agar in either powder or sticks. I use one inch of stick to replace each egg (up to three) and it usually works great in baked goods. I am sorry to have been the bearer of such bad news - smile.
