Guest guest Posted March 3, 2003 Report Share Posted March 3, 2003 This coming Sunday is " Pretzel Sunday " at my church where they bake a whole bunch of pretzels and do a children's sermon on pretzels (they're big hugs...) My little dude LOVES pretzels (Glutino), but I'd love to make him one that looks like the ones at church! Any recipes? Jo, do you think maybe your bagel recipe would work? We do eggs... We do eggs... >> Okay, remember that I said I couldn't roll them enough to make into a circle? They are the right texture, though. Perhaps you could cut a circle from the long roll of dough, use a cookie cutter to take out the center of the circle, and break and reattach the remaining outline of dough in the proper hug? If not, here's a wheat flour recipe for pretzels that you might be able to adapt: 1 Tbsp yeast, or 1 pckg 4 cups flour (I'm guessing much less gf flour than that) 1/2 tsp sugar 1 1/3 cups warm water 1 tsp table salt 1 egg, beaten. coarse salt or onion flakes Dissolve yeast in warm water with sugar. Add flour and salt, kneading in as necessary to mix in flour. (Let rise? Not for gf flour) Pinch off pieces and roll into 12-inch strings. Tie into knots. Brush with egg and sprinkle with onion or salt. Bake 15-20 min. My dh teaches the preschool sunday school class. You'll have to send me the topic (big hugs?). Guest guest Posted March 4, 2003 Report Share Posted March 4, 2003 Pretzels Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon dry yeast 2/3 cup warm water -- (105 deg F) 1/2 teaspoon sugar 1/2 cup brown rice flour 1/2 cup tapioca flour 1 tablespoon dry non-dairy milk powder 2 teaspoons xanthan gum 1/2 teaspoon salt 1/4 teaspoon onion powder 1 teaspoon unflavored gelatin powder 1 tablespoon olive oil 1 teaspoon cider vinegar 1 large egg white -- beaten 1 tablespoon coarse salt cooking spray Combine yeast, warm water, and sugar in a small bowl. Set aside for 5 minutes or until yeast is foamy. In medium mixer bowl, blend the flours, dry milk powder, xanthan gum, salt, onion powder, and gelatin powder on low speed. Add yeast mixture, olive oil, and vinegar. Beat on high speed for 3 minutes. Place dough in a spritz cookie press or a large heavy-duty plastic resealable bag that has 1/4-inch opening cut on one corner (makes 1/2-inch circle). Squeeze dough through opening onto baking sheet that has been coated with cooking spray. It works best to hold the bag upright as you squeeze the dough out. You may make traditional pretzel shapes, but straight 3-inch sticks are easier. Brush lightly with beaten egg white, then sprinkle with coarse salt. Place pretzels in a warm place to rise for 10-15 minutes. Preheat oven to 400 degrees F. Bake until pretzels are dry and golden brown. When cool, store in an airtight container.
