This is my first year off gluten, and Passover is coming up.

There are substitutes and Passover's actually one of the best times of year to

be gluten-free. You will find ready-made cakes and other goodies typically

off-limit that are now ok. You want to make sure foods say: non-gebroktz - this

means, there's no matzah products in the dishes. You can have Oat Matzah - it's

the one time of year oats are safe and gluten-free. The rabbi who makes this

product started because his daughter has Celiac, if I'm remembering correctly,

and he wanted her to be able to have matzah for Pesach. The price of a box is

similar to the price of the Oat Shmura Matzah is similar to the price of regular

wheat-filled Shmurah Matzah (about $18-$20 per box). He only grows oats in his

field, so there's no risk of cross contamination - if only he'd make something

with them all year round, but only having that once a year makes oats as special

as it made matzah in my pre-gluten-free days.

 

You need to avoid: matzah, matzah meal, matzah farfel and cake meal - all are

variations of whole matzah and are wheat. I use potato pancake mix as a matzah

meal substitute and you can get a product from Paskez called Pesach Crumbs. This

product is fabulous and I buy a couple of cases each year and use them

throughout the year. There is a recipe for making kneidlach (substitute matzah

balls) on the box as well as some other recipe that I can't remember offhand.

 

Other than having to flip my entire house to prep for the holiday, I look

forward to all the extra choices with food I have. Wilton makes non-gebroktz

blintzes I just adore and Schick's Bakery in NY has a whole line of non-gebroktz

tasty treats. I can't remember other brands or products off the top of my head,

but go to a local Kosher store and have fun. It's my favorite time of year.

There is a matzo sub but I will have to have a look on my GFCFRecipes list.

Several of the members there are of Jewish heritage and we have discussed this

for the last few years now.

 

I will get back to you asap.
